Vegetable Paniyaram N Vegetable Oothappam




      I am re posting this recipe as it did not appear in my archive :( Few days back Blogger was not available due to some reason...when it came back the entire post was missing with all your lovely words n again it was there in my blog but when i checked yesterday it was totally missing in my archive,so i want to add this yummy recipe to my archive again....
My kids favorite breakfast.they love paniyaram more to ..play :) hmmm...to them its like small balls they both will be more excited.They both will throw at each others face n they laugh loudly n enjoy the play more than with the toys.
Some times i too enjoy the scene without disturbing them...they both shout at laughter n by chance they will have one or two bites...that makes me even more happy :)This time to impress (to make them eat some) them i made paniyaram with some mixed vegetables...my  effort was great success..yep they both liked it very much and sanjay, he asked the same for lunch also.So you also try to sneak veggies in similar way to full your kid's tummy..Heres the recipe

Ingredients
1.     Dosa batter    1 big bowl
2.     Mixed vegetables    1 and 1/2 cup(carrot,cabbage,beans,potato)finely chopped
3.     Onion   1 medium(finely chopped)
4.     Tomato   1small (finely chopped)
5.     Ginger   2 tsp(finely chopped)
6.     Green chilli   1 no.(finely chopped)
7.     Turmeric powder   a pinch
8.     Chilli powder   1/2 tsp
9.     Salt   as per need
10. Cilantro   few finely chopped
To temper
1.     Oil   1-2 tsp
2.     Mustard seeds   1/2 tsp
3.     Chana dal  1 tbsp
4.     Urad dal   1/2 tbsp
5.     Curry leaves   few
Method



  • Wash and finely chop the vegetables (use any available to u ..i don't have cilantro so i used some chopped spring onion greens) and keep aside.
  • Heat oil in a pan,add the tempering ingredients one by one and fry lightly and add onions,ginger and green chillies and saute lightly.
  • Then add beans and potato and sitr for a minute and add cabbage and carrots and stir for another minute.
  • And add tomatoes,chilli powder and turmeric powder and stir well.
  • sprinkle some salt,Cover it with a lid and cook for few minutes and lastly add some cilantro and mix well and remove from the stove.(no need to cook vegs completely..half done is enough)
  • Vegetable Paniyaram
  • And add the fried vegetables to the dosa batter and mix well.

  • Heat a paniyaram pan,when it gets hot add few drop of oil/ghee in to each hole and pour a spoonful of batter to each hole.
  • Then after few minutes turn them carefully to the other side and cook till turn crisp and light brown on both sides.
  • Now vegetable paniyaram is ready and serve hot with coconut chutney n tiffin sambar.

Vegetable Oothappam

    My H doesn't like paniyaram...so i made this vegetable oothappam for him.I simply served with coconut chutney.(without tempering...i like this type of chutney for paniyaram...gives nice smell)
  • Transfer the fried vegetables to a bowl and keep aside.
  • Heat a tawa/griddle ,when its hot pour 2 ladle full of batter and spread in circular motion..make it thick like pan cake.
  • Now sprinkle the fried vegetable all over the dosa and drizzle some oil in and around the dosa.
  • Cook in medium heat and after 2 minutes flip the dosa carefully and cook for another minute and remove from the tawa.
  • Enjoy the oothappam with chutney and sambar.

You can use any number of vegs of your choice n also try adding some greens like spinach/methi,if in hand.
