Aloo Capsicum Curry/ Potato Capsicum curry

Potato n Capsicum/Bell Pepper is one of the classic combo loved by many of us right?! Its our favorite too, especially this curry/sabzi. This is another simple and yummy recipe which goes well with any kind of meal. I mostly make this for chapathi for dinner. As the potatoes are cooked covering it turns so soft n the masala were well coated n absorbed by it which in turns spicy n delicious n perfectly matches with phulkas/rotis. In the ingredient picture, its with gold/yellow potatoes but today i used red potatoes/salad potatoes. The spice level mentioned in the recipe will yield u a mild spicy curry. Now to the recipe...




Ingredients
  1. Aloo/potato    3-4 no.s(diced)                                                                 
  2. Capsicum/Green Bell pepper  1Big (diced)
  3. onion   1no. (chopped)
  4. curry leaves     few   
  5. Fennel seeds  1/2 tsp
  6. turmeric powder   1/4 tsp
  7. chilli powder  1tsp
  8. cumin powder/freshly ground cumin   1tsp
  9. garam masala powder  1/2 tsp
  10. oil  3-4 tsp
  11. salt as needed 

Method
  • First fry the capsicum lightly with a tsp oil and keep aside. 
  • Take a non stick pan ,heat oil add few mustard seeds and fennel seeds,when they pop add chopped 
  • onions and curry leaves. 
  • sprinkle little salt and saute it , fry the onions lightly. 
  • Add the potato and turmeric powder,mix it well and fry . 
  • Turn the heat to low,close it with a lid and cook for 4 minutes. 
  • Open the lid for every 1-2 minutes ,give it a stir and fry well. 
  • Once the potato get half cooked or becomes little soft add the fried capsicum and all dry powders, salt as needed and mix well. 
  • Close the lid and cook till the raw smell of the masala goes . 
  • no need to add water ,cooking in low heat with closed lid will make the potato soft and tastier. 
  • At last add the chopped coriander leaves and serve hot as an accompaniment of your choice, but goes well with phulka,rotis,dosa,any rice,pulao etc.

Note: 
Not only green bell pepper you can also add yellow and red peppers.
Try to use curry leaves, since it gives nice flavor to the curry along with fennel seeds.
Adding more onions gives nice taste n the moisture form the onions makes the curry not dry but juicy.

  3. I tried this recipe with baby potato, red and green capsicum.
    Also, I added 2tbsp of ground peanut at the end.

    This recipe turned out really tasty and spicy.
    It was loved by all the guests.

    Would recommend it!!!
